The role
As the executive chef you will manage 2 of the best venues Dunedin has to offer. In this role you will be responsible for all kitchen operations across multiple locations and ensure the safe and efficient running of those kitchens. Your responsibilities will include:
•Identify customer requirements; plan and control menu-based catering.
•Cost menus and ensure compliance with costing constraints.
•Carry out catering control procedures (portion control, stock control, food storage).
•Develop, coach, lead and manage people and model high standards of performance and behaviour.
•Develop and implement Kitchen staff roster.
•Establish and implement a supply process; stock control systems as well as purchase and manage stock.
•Prepare, cook and present food and strive to exceed consumer satisfaction.
•Plan and execute catering for all events or functions.
About you
You'll be a team player who knows the importance of leading from the front, possess outstanding communication and people skills and thrive when under pressure. You will also need the following:
•NZQA Level 4 Cookery Certificate or equivalent trade qualification.
•NZQA Food Handling Certificate (Units 167 & 168).
•Minimum of 5 years working in a similar role.
•Flexible approach and attitude with good communication skills.
